Found a little inspiration in the Martha Stewart February issue. Who could wait until Valentine's Day to make these yummies? I'm sure I'll whip up another batch (different color and flavor) next month. I've always had a thing for cupcakes and hearts:)
I know it looks like I cook a little more often than I do, truth is..... Dan cooks 5-6 nights a week. I just love to bake! I love dinners to candlelight--when we decide to eat in the dining room I have to get the china, glasses and candles out.
Tonight, not a fancy dinner. Turkey burger pinwheels with mushroom gravy and veggies. Every one loves this turkey stuffed pastry roll and the gravy is really yummy. Easy as pie, she says.
Turkey burger Pinwheels with Mushroom gravy
1 1/2 pounds turkey burger or ground beef
1/2 cup chopped onion
season salt
salt and pepper
1 can cream mushroom soup
Crumble burger in pan with onions and seasonings until browned. Add 1 can cream of mushroom soup, keep warm.
Biscuit Mix
2 cups flour
1/2 tsp. salt
4 TB shortening
1 TB baking powder
1/4 cup milk
In bowl mix flour, salt, baking powder. Cut in shortening, gradually add milk until well combined. On floured surface roll dough in shape of rectangle. Top with meat mixture. Roll up starting with long end, cut in 1-2 inch pieces to make pinwheels. Place on lightly greased pan. Bake 375 for 20 minutes or until brown.
Gravy
3 cans cream of mushroom soup
1 1/2 cups milk
In saucepan mix soup and milk with wire whisk. Bring to a boil stirring constantly. Simmer 1 minute. Pour over pinwheels.
