I'd be sunk without you.......

 
Yummy Spring Chocolate cupcakes. I found this recipe from The Farm Chick's. I just added cream cheese to the frosting recipe. As you can see, I'm a messy froster---is that a word? Anyway, I thought they looked fun---but most importantly, a very yummy recipe.

   

About the title......I can't make a homemade cake that doesn't fall in the middle to save me. I'm suppose to bring a cake to work for the March Birthday Folks. I'm a little embarrassed that it sunk, yet again. I added sprinkles, no luck---added saran wrap and hid it with a bow. If they find out, I do have a plan. "Don't have that sinking feeling on your birthday!" Or "I'd be sunk if I forgot your birthday". That's my back-up---I meant to do it. (no more coffee today for me-or frosting I've been sneaking).

 

Jake's magnetic chalkboard wall. School house green and we'll probably add some molding in a rustic red color. I have wanted to try this for so long. We painted 3 coats (should be 4-6 coats) of magnetic primer and then 2 coats of school house green chalkboard paint. The lady at Home Depot said to use more primer, because your magnets may slide....but of course Mrs. Impatient Pants wouldn't listen......so that's what glue dots are for right? :) I can't wait to display Jake's art work and his toy cubes need organizing. I'll send a photo your way when it's all set.

 

The chicks are back, last year the poor suckers stayed until October. This year I'm trying to decorate on time :) Oh the beautiful banner you ask? From my sweetest blogging buddy Ele. She has a beautiful blog and great decorating ideas, stop by and say hi :) She's a great chick, or should I say stork? She cooks with her leg up, that's when I knew we'd be pals forever. lol

Spring....not so much

 

Snow covered daffodils? Yes, it's true......if I wasn't so cold I'd go take a picture to show you the poor honey's.  Saturday was almost 70 degrees and now it's a wee chilly at 38! We planted a few pansies because I knew this was coming and their tough little guys. This winter like weather will be staying with us for the next week. (oh, and I picked up these flowers too!) Just because of that big pink one.

 
We stopped at IFA, a farming supply store for the pansies....and the sweetest bunnies were there. The black bunny stole my heart and the white one....and....well all of them. The little chicks were adorable....wish I would have brought my camera! Anyway, they inspired me for my new bunnies and hopefully some baby chicks too.

Chile Verde

 

This is the yummiest-easiest Chile Verde! We use our left over pork roast the next day to make Chile Verde burritos. I'll start with the pork roast, because this is the important part : )

Brown pork roast in skillet and sprinkle with season salt and pepper. Transfer to crock pot adding sliced onions, potatoes, carrots and 1 package Lipton onion soup mix. I add about 3/4 cup water. Cook on low for 12 hours. You will have pull apart beautiful shredded pork. Great for Verde. Save half of your pork roast for your Chile Verde the next day.

 

Chile Verde Burritos Enchilada Style

shredded cooked pork bite size pieces
2 cans green chile enchilada sauce
1/3 cup or less jalapenos (more if you're a tough guy)
3 packages pork gravy (adding water as directed on packages)
flour tortillas
sour cream
sliced olives
colby/jack shredded cheese
tortilla chips
lime

Combine pork, enchilada sauce, jalapenos and gravy in pan. Bring to a boil and simmer 30 minutes. Stir frequently.

Heat tortillas until warm. Add 1/3 cup Verde and roll up into burritos. Smother in additional Verde and garnish with cheese, sour cream and olives. This Verde is also great on the side for dipping tortilla chips.

Thinking of Spring shoes or boots? Well, I always refer to my Beauty ~ Charm ~ Poise book when selecting the proper Spring shoe :) ha!

Says here, "If you wish to hide your feet, avoid loud colors, fancy, flimsy footwear, platform soles and ankle straps".

My guess, these Spring Boots would certainly hide your toes (if not painted) but you would draw a certain amount of attention.
