One of our favorites :)

Oatmeal Crispies

1 cup shortening
1 cup brown sugar
1 cup sugar
2 well-beaten eggs
1 tsp. vanilla
1 1/2 cups sifted flour
1 tsp. salt
1 tsp. soda
3 cups quick-cooking oats
1/2 cup chopped walnuts or pecans

Cream shortening and sugars. Adding egg and vanilla until well combined. In separate bowl, sift flour, salt and soda. Gradually add to sugar mixture. Stir in oats and nuts.

Shape in long log roll, wrap in wax paper and chill. Slice 1/4 inch thick.

Bake un-greased cookie sheet 350 degrees for 10 minutes. Makes 5 dozen.

Hello! Happy Weekend :) I've been a baking fool for the past couple weeks. Since Aunt Ruth bought me my first cookbook "The Good Housekeeping Illustrated Cookbook", in ninth grade.....I've been a collector of cookbooks. Dan and I still use the same Lasagna recipe and I love the Rice Pilaf with Peas. Oh, and not to mention it taught me how to boil the Perfect egg :)

Some people take a good novel to bed....not me.....it's a magazine or cookbook. I really wish it were different, and I'll occasionally grab a good book....but cookbooks make me Happy :)

I decided to check out Pioneer Woman's cookbook at the library. I thought maybe it would be a little like her blog and that I wouldn't need a copy. Well, was I wrong! I started reading it on the Friday before Easter and really haven't put it down. The Bunny put it in my Easter basket a few days later....so now I have my very own :) I love it! it's a nice addition to her blog. I also love Jamie's Food Revolution........it's a library book too and I will definitely purchase this one. Just wanted to share..... if you're in need of some good recipes and good reads.

Yes, Pioneer Woman's Cinnamon Rolls with Maple Icing are as Marvelous as she says they are. Really, do try them :) The coffee in the recipe really makes them special.
 

This recipe made two jelly roll pans and a round baking dish. I'm proud to say I only ate one and shared them with co-workers....OK, and froze a few just in case :) 

My father in law also makes the most wonderful cinnamon rolls. He was sweet enough to write down the recipe last time he was visiting. This is the recipe my husband grew up with and will always be the BEST Cinnamon Roll Recipe Ever :) I'll make them next month and share the recipe with you.....maybe with some cream cheese icing. YUM!

a little bit of sunshine......

Just dropping in to say hi and leave you with a few yummy recipes.

 

Our friend Pam, makes this delicious "Sunshine Cake" at my husband's work. I'm sure I'm not doing it justice with these photos but it's so pretty and yummy.

Sunshine Cake

Angel food cake
Container Rainbow Sherbet

Tear angel food cake in pieces and place around bundt pan. For the second layer, use an ice cream scoop and scoop rainbow sherbet on top of cake and all around. Keep repeating layers and pressing down with each new addition. 

I actually used a white cake mix from a box. I'm not a huge fan of the "angel food cake", so whatever you prefer. Dan said it's great both way.

When you reach the top of your bundt pan, smooth all the way around with a rubber spatula and wrap tight in foil. Freeze overnight or for at least 4 hours.

Fill your sink with hot water, and dunk the bottom of the bundt pan in hot water for 30 seconds or so. Invert on cake plate, it should come out easily, if not repeat process.

OK, now what to do with all of these eggs. Potato salad of course :)

Mom and Dad's Potato Salad

6-8 potatoes
6 hard boiled eggs
handful chopped scallions
3 celery stalks cut in small pieces
2-3 cups mayo
2 TB. yellow mustard
2 TB worcestershire
1 tsp. parsley
1/8 tsp. garlic powder
1/4 tsp. season salt
1/8 tsp. pepper
paprika

Boil potatoes until a fork can easily be inserted. Cool, peel and cut in small cubes. 

In large bowl add potatoes, celery and scallions. Set aside.

Peel 3 boiled eggs and cut in small pieces. Add to potatoes, celery and scallions.

In separate bowl combine mayo, mustard, worcestershire, parsley, garlic powder, season salt and pepper. Mix until smooth. This is the part that you will need to add more seasonings, if needed. If your mixture is too salty, add more mustard and mayo and so on. When you get the mix just right, start adding a little at a time to the potato mixture. Stir until you get a nice consistency that's right for you.

Slice 3 eggs for decoration. Place over potato salad and sprinkle with paprika. Chill for 3 hours before serving.

My sweet friend Theresa gave me the recipe for this delicious carrot quick bread. It's so good and very much responsible for my pants not fitting.....I'm working on that. Here's the recipe :) I used the cream cheese frosting recipe here, only because I was already making frosting for my bird nest cakes. Thanks Theresa!

bird nest cupcakes

 

I pulled out last year's Country Home Magazine to make these cute little bird nest cupcakes. Too bad April was the last publication :( I sure miss that one! I didn't use the recipe, just the idea. Just keeping it simple :)

Bird Nest Cupcakes

Box cake mix or recipe of choice
Cream cheese frosting (recipe below)
Chow mein noodles
Speckled jelly bean eggs

Prepare cupcakes according to box directions. I like to use the carrot cake or spice cake mix. Let cool and frost with cream cheese frosting.

Cream Cheese Frosting
2 8 ounce cream cheese
1 stick butter, softened
1 tsp. vanilla
1/2 cup chopped pecans
16 ounce package powdered sugar

Combine cream cheese and butter until smooth. Add vanilla and gradually add powdered sugar until light and fluffy. Stir in pecans.

Frost cupcakes and garnish with chow mein noodles for nest and speckled eggs :)

 

I also made a little carrot cake decorated with a bird's nest. I used Paula Deen's Carrot Cake recipe.
