Something yummy for the weekend. It's definitely the season for raspberries. You can make this recipe with your own fresh raspberry jam or use any kind you wish. Hopefully next year I'll have a garden full of red raspberries :)
These are some of the things you'll need.....
Mix until crumbly......
Raspberry Oatmeal Bars
3 cups flour
3 cups oatmeal
2 cups packed brown sugar
2 tsp. baking powder
1/2 tsp salt
1 1/2 cups unsalted butter
2 cups raspberry jam
Combine flour, oats, sugar, baking powder and salt. Mix until combined. Cut butter in cubes and gradually add to mixture until combined and crumbly.
Press a little more than half of mixture in ungreased 9 x 13 pan. Stir jam until smooth and spread on top. Sprinkle remaining crumbs on top of jam.
Bake 375 degrees for 25-30 minutes or until lightly brown. Cool and cut in bars. This is also Yummy served warm with ice cream or whipped cream. So good!
