Hope you had a great weekend :) Here's a little Italian dinner we made tonight.....thought I'd share.
I found this Bow-tie Lasagna over here, thought it sounded yummy. Dan makes his own spaghetti sauce, so this turned out really yummy.
I made salad with my first tomatoes from the garden (hooray!), shredded some colby jack, pepper and Parmesan. I wanted some cherry tomatoes from the garden.....hmmmm....someone ate them? Yep, Gertie, our Retriever is a tomato thief.
Also, made some garlic bread.....this is what I do.
Garlic Bread
Slice one loaf of french bread down the middle. Spread butter, sprinkle with Parmesan, garlic sprinkle and parsley flakes. Broil for a few minutes. Best Garlic Bread ever.
We finished dinner with "Salted Caramel Bars", a recipe out of Country Living that I wanted to try. These are yummy and gooey-----they did not disappoint :)
Salted Caramel Bars
8 cups rice krispy cereal
3/4 cup corn syrup
2/3 cup sweetened condensed milk
1/2 cup packed light brown sugar
1/4 cup sugar
4 TB unsalted butter
1 tsp. sea salt
1 1/2 tsp. pure vanilla extract
1/4 cup milk chocolate chips
1/4 cup white chocolate chips
Liberally spray large mixing bowl and 9 x 13 pan with cooking spray. Add cereal to bowl, set aside.
In medium saucepan over medium-heat, combine corn syrup, condensed milk, sugars, butter and sea salt. Bring to a boil, stirring constantly. Stir for 3-5 minutes or until light golden brown. Turn off heat and add vanilla. Stir.
Immediately pour over cereal, stirring until well combined. Spread in prepared 9 x 13 pan. Let cool 45 minutes. Invert on wax paper.
Melt 1/4 cup milk chocolate chips in microwave for a 1 1/2 minutes, stirring in between. Add to sandwich baggy, clipping end and drizzle over bars. refrigerate 15 minutes, repeat with white chocolate chips. The original recipe only uses dark chocolate chips, with one step. I had to be a rebel and use two of the naughtier ones :) Cut in bars.....YUM!
