Pumpkin Bread Parfaits

Hope you're all having a FUN weekend. We've had gorgeous weather here:) I've been decorating our porch for Fall and adding a little Halloween fun inside.

We didn't do anything exciting but clean the garage today......but it feels so GOOD to do that! Why is that? Anyway, I think I've wore out my welcome as garage foreman :) Sorry baby......so here's a Pumpkin Parfait to sweeten things up :)

Last post, I made lots of pumpkin bread. I secretly knew I was going to make this recipe I found a few years ago. It just sounded so good!

Pumpkin Bread Parfaits

pumpkin bread
prepared instant vanilla pudding
whipped cream
caramel sauce
walnuts or pecans

Prepare vanilla pudding, any size you wish, chill.

Slice pumpkin bread and cut in cubes, set aside.

Layer pudding, whipped cream, pumpkin bread, pudding, whipped cream. Drizzle with caramel topping and sprinkle with nuts if desired.

Hope you love this dessert :) Dan has decided to forgive me for being a little bossy :)

Fall Pumpkin Bread

 

Hello! It's been awhile. Here's some yummy bread to Welcome Fall!

Oh YUM this is really good bread! Oh sure, here's the recipe :)
Dan is going to be so excited when he sees this! He loves pumpkin bread!

Pumpkin Bread

15 ounce can pumpkin puree
3 cups sugar
2/3 cup water
4 eggs
1 cup vegetable oil
3 1/2 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. ground ginger

Grease and flour 3 or 4 mini loaf pans depending on the size you are using.

Combine pumpkin, sugar, eggs, water and oil. Mix until well combined.

In a separate bowl combine flour, salt, soda, cinnamon, nutmeg, cloves and ginger. Stir together and gradually add to pumpkin mixture until combined.

Pour in prepared pans and bake 350 degrees for 50 minutes or until toothpick test :) Here's where I found the recipe.

 

Wrap in saran wrap with a pretty bow and deliver to someone special :)

a pancake morning......

Good Morning.....or almost afternoon  :) I'm not much of a morning person so my afternoon doesn't really begin until around 2 p.m.

I had a craving for pancakes this morning.........I love Jamie Oliver's Pancake recipe. You may never use a box mix again.

Jamie Oliver's Pancakes

1 egg
1 cup self rising flour
1 cup milk
pinch of sea salt

Mix together and pour in heated skillet with a bit of olive oil.

Have a great day......it's almost the weekend. Hooray!

oh Granny!

 

Friday was such a FUN Crafty day :) I spent time with Becky from Stampin UP and went to a very Hip Granny Square class at JoAnne's.

I chose these bright Summer colors because they are just so fun to work with. I get very bored and have close to no attention span, so granny squares or in this case one continuous granny square throw is just for me :)

I'm on row 5 and only 7 more to go! I may add a few more rows because my gauge is off slightly due to using a smaller crochet hook. It's really different and fun for me to use this chunky wool.....but I'm getting used to it.

 

Welcome to Becky's Halloween Stampin UP class. It was a blast and she really went over and beyond with so many fun things to make.

We made five projects:

2. Paper art candy wrapper
3. Halloween note card
4. Halloween card
5. Halloween bat cake toppers 

 

I can't wait to sign up for another class Becky....so much fun thank you!

 

I had to snap a few shots of where Becky creates, I want to move in!

I love ribbon and punches......Becky has this room all organized on shelves that Jeff, Becky's husband made and lots of cute organizing jars and containers.

 

Becky's  stamps and all in alphabetical order...of course. Becky would get along with Dan just fine.....he's an alphabetical fool too :) lol

Strawberry Muffins......

I was planning on making more strawberry jam today but Ina's Tri-Berry Muffins were calling to me. I didn't have blueberries or raspberries, so I used all delicious strawberries from our garden.

Tri-Berry Muffins
adapted from Ina Garten

3 cups flour
1 TB baking powder
1/2 tsp. baking soda
1/2 tsp. kosher salt
1 1/2 TB cinnamon
2 large eggs, lightly beaten
2 sticks unsalted butter, melted
1 1/4 cups milk
1 1/2 cups sugar
2 cups berries

Combine flour, baking powder, baking soda and salt. Sift together until well combined. Make a well in the center and set aside.

Mix melted butter, eggs and milk in bowl until combined. Add to flour mixture in well. Stir just until combined. Add sugar and berries. Mixture will be a bit lumpy.

Spoon in muffin cups or sprayed Texas muffin pan (I used both). Bake 375 degrees for 20 minutes, checking with toothpick test.
 

I always have to be a rebel, add whip cream and sprinkle with cinnamon. So good!

I received my sweet package from Theresa of Faerie Moon Creations. She has gorgeous artwork, jewelry and knits. Theresa is so very talented!

 

Here they are....all ready to put in a few much needed books. I need to hurry and read Eat, Pray, Love before I see the movie....that's a rule of mine that I picked up from my husband :)
