Baja Smoked Chicken Fajitas
2 pounds boneless skinless chicken breasts cut in strips
1 package Grill Mates Baja Citrus Marinade
1/4 cup olive oil
2 TB water
2 TB vinegar
1 red bell pepper, cut in strips
1 green bell pepper, cut in strips
1 yellow bell pepper, cut in strips
1 medium yellow onion, cut in strips
1 tsp. smoked paprika
1 lime, cut in half
1 package flour tortillas
colby jack cheese, shredded
In large zip lock bag add olive oil, water, vinegar as directed on package. Add chicken strips, seal bag and roll around until well combined. Refrigerate 1 hour.
In large frying pan or wok, combine oil olive (about 2 TB, or more if needed), peppers and onions. Add chicken, sea salt, pepper and squeeze 1/2 lime over. Stir well to coat and cook on medium heat until vegetables are tender and chicken is no longer pink and juices run clear.
Squeeze other half of lime over Baja chicken and serve on heated flour tortillas.
Top with cheese and sour cream if desired :)
