
This week we celebrated Jess's birthday with a special dinner and Mud Pie.

Jess is a very talented artist. We thought we would be a little creative and give her a basket full of goodies from her childhood. Coloring book, sketch books, crayons, scratch and sniff stickers, soda and lolipops.
Of course we threw in a cool shirt and some funky jewelry :)

Mud Pie
container coffee flavored ice cream, softened
cool whip or whipped cream
chocolate graham cracker ready crust or homemade
caramel topping, optional
hot fudge topping
1 cup crushed chocolate cookies
Spread half ice cream in cooled chocolate cookie pie crust. Freeze for 30 minutes. Spread generous layer of hot fudge over ice cream. Freeze another 30 minutes. Top with remaining ice cream, cool whip and cookie crumbs. Freeze 4-6 hours. Drizzle with caramel and additional hot fudge before serving.
Homemade Chocolate Cookie Pie Crust
1 package Oreo sandwich cookies
6 TB butter, melted
2 TB powdered sugar
Remove filling from chocolate oreo cookies. Add cookies to food processor or blender, blend until finely crushed.
In small bowl combine, 1 1/2 cups cookie crumbs, powdered sugar and butter. Stir until well combined.
Press in pie plate, or I used a spring form pan to make our mud pie. Worked GREAT!
Bake 350 degrees for 10 minutes. Cool completely
