Here's a yummy Chicken Corn Chowder recipe.
It's so GOOD with corn bread and honey butter :)
Chicken Corn Chowder
2 cups cooked chicken breast, cut in bite size pieces
3 14.5 ounce cans low sodium chicken broth
2 cups frozen corn
1 small onion, diced
2 carrots, peeled and diced
4 potatoes, peeled and cubed
1 bay leaf
1 garlic clove, minced
pinch garlic powder
salt, to taste
1/8 tsp. pepper
1/2 tsp. crushed basil
8 ounce block cream cheese
2 cups whole milk or cream
3 slices bacon, cooked, drained and crumbled
1/2 cup colby/jack cheese grated
3 green onions, chopped
In large saucepan, cook bacon until crisp and put on paper towel. Reserve just enough bacon grease in pan to saute onions, garlic and carrots. Saute on low heat for just a minute or two.
Add potatoes, chicken broth, bay leaf, basil, pepper and garlic powder. Bring mixture to boil and cook on medium heat for 10 minutes. Add corn and chicken. Cook until potatoes and carrots are tender.
Add milk and simmer for another 10 minutes.
Stir in softened cream cheese and season with salt and additional pepper if needed. Disgard bay leaf.
Top with bacon, cheese and green onions.
Serve with corn bread and honey butter.
