A yummy dessert for you......Happy Cinco de Mayo!
Key Lime Pie
1 1/4 cups graham cracker crumbs
1/3 cup butter, melted
1/4 cup sugar
4 large egg yolks
1 14 ounce can sweetened condensed milk
1 lime, juiced
1/4 cup key lime juice (Nellie and Joe's)
2 tsp. lime zest
whipped topping
Combine graham cracker crumbs, sugar and melted butter. Press in 9" pie plate and bake 375 degrees for 5 minutes. Cool before filling.
With an electric mixer, beat egg yolks until they are thick and turn to a light yellow. Slowly add sweetened condensed milk on low speed. Pour fresh lime in 1/2 cup measuring cup and then fill with key lime juice to make a full 1/2 cup of juice. Gradually add lime juice and zest to mixture just until combined.
Pour in pie crust and bake 350 degrees for 15 minutes.
Cool and top with lots of whipping cream.
