If you love bananas, if you love cake, if you love banana bread and especially if you LOVE cream cheese frosting.
This is the cake for you. A definite lover.
I was kinda cracking myself up with this no banana display on our porch.
The neighbors must think I've gone mad.
Banana Cake with Cream Cheese Frosting
1 1/2 cups very ripe bananas, mashed
2 tsp. lemon juice
2 1/8 cups sugar
3/4 cup butter, softened
3 eggs
2 tsp. pure vanilla extract
1 1/2 cups butter milk
3 cups flour
1 1/2 tsp. baking soda
1/4 tsp. salt
In small bowl, combine mashed bananas and lemon juice. Stir and set aside.
In medium bowl, combine flour, baking soda and salt. Set aside.
In large mixing bowl, combine butter and sugar. Mix until well combined. Gradually add eggs, one by one and vanilla. Alternate flour mixture and butter milk to sugar and butter mixture. Mix until combined. Stir in bananas.
Pour cake in greased and floured 9x13 pan.
Bake in a 275 degree oven (yes, 275 degrees). Bake 1 hour , or until toothpick comes out clean. I usually have to bake this 10 minutes longer. Immediately place cake in freezer for 45 minutes.
When cool, frost with cream cheese frosting. Recipe below.
Cream Cheese Frosting
8 ounce cream cheese, softened
1/2 cup butter, softened
1 tsp. pure vanilla extract
3 1/2 cups powdered sugar
In mixing bowl, combine cream cheese and butter. Mix until creamy and smooth. Add vanilla. Gradually add powdered sugar. Whip until well combined.
Frost banana cake and fall in love.
