Good Morning!
Well, I had to find a way to use the buttermilk---leftover from the banana cake .
So.....made some delicious buttermilk pancakes :)
It made a TON----so I put a few in zip locks and popped them in the freezer for a quick breakfast anytime.
Buttermilk Pancakes
3 cups flour
3 TB sugar
3 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
1 tsp. pure vanilla extract
In small bowl, combine dry ingredients, set aside.
In large bowl, combine buttermilk, milk, eggs, butter (that has cooled slightly) and vanilla. Whisk until smooth.
Mix both together, just until combined. Do not over mix.
Prepare hot griddle with a small amount of vegetable oil on low to medium heat.
Pour 1/2 cup batter on hot griddle. Flip when bubbles appear and pancake starts to brown.
Serve with butter and lots of maple syrup.
