It's soooo COLD here. It's been 10 degrees most days, but I hear we are in for a heat wave of highs in the 30's tomorrow :)
If you know me really, I could eat soup when it's 100 degrees outside.
I used our left over ham from Christmas to make this easy crock pot soup.
Cheesy Ham and Potato Soup
6 medium potatoes, cut in cubes
3 carrots, peeled and diced
1 medium onion, diced
2 celery stalks, diced
3 cloves garlic, minced
1 bay leaf
1 tsp. parsley flakes
sprinkle of season salt
1/8 tsp. black pepper
2 cups cooked ham, cut in bite size pieces
5 cups water
4 tsp. chicken granules
1 jar cheese whiz
1/2 cup butter
1/4 cup flour
additional salt and pepper to taste
In crock pot add first 12 ingredients.
Cook on low setting for 8-9 hours.
Just before soup is ready, melt butter in skillet and whisk in flour. Stir until combined and mixture just starts to bubble.
Add to crock pot.
Stir in cheese whiz. I used an immersion blender for just a few seconds to combine my soup.
