I have to say, these are the BEST cupcakes on the planet!
The texture is amazing and I won't even talk about how heavenly the frosting is.
I love a good recipe that makes just enough for a 12 cup muffin tin or if you wanted you could use a mini muffin tin. Either way.......it's all good.
I made the cupcakes with Valentine cupcake papers and made a few cupcake wrappers with my Silhouette.
So cute!

Snow, Snow and more SNOW. I LOVE it, but am not too crazy about driving in it.
I snapped a few photos of our snow storm Sunday night and then came inside to play a game of Monopoly. Jake loves it, we didn't get too far and it was hard to explain to him that the game could go on for a LONG---long time.

Vanilla Cupcakes with Buttercream Frosting
1 1/2 cups flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
8 TB unsalted butter, 1 stick, room temperature
1/2 cup sour cream
1 large egg
2 large egg yolks
1 1/2 tsp. pure vanilla extract
In mixing bowl with paddle attachment, whisk together flour, sugar, baking powder and salt. Add butter, sour cream, egg, egg yolks and vanilla. Beat until smooth, scraping down bowl twice.
Divide batter evenly in prepared 12 cup muffin tin. Bake 350 degrees for 18-22 minutes or until toothpick comes out clean.
Transfer cupcakes to wire rack to cool. Frost when cool with Buttercream Frosting.
Vanilla Buttercream Frosting
1 cup unsalted butter, room temperature
2 1/2 cups powdered sugar
1 TB pure vanilla extract
Cream together butter and vanilla. Gradually add powdered sugar. Add a couple drops of food coloring if desired.
Note: I didn't have unsalted butter, so I only added 1/4 tsp. salt. Turned out great! Also, my cupcakes were done in 18 minutes, so watch carefully :)
