This is one of my very favorite meals. We have it a few times a month on Taco Tuesday. I'm pretty sure I could eat them everyday if my family would let me.
Grilled Chicken Cilantro Lime Fajitas
2-3 boneless skinless chicken breasts
2 TB cilantro, chopped
2 cloves garlic, chopped
zest from one lime
4 TB lime juice
1/2 tsp. salt
1/2 tsp. ground pepper
1/4 cup olive oil
1 red bell pepper, cut in strips
1 green bell pepper, cut in strips
1 yellow bell pepper, cut in strips
1 onion, cut in strips
2 TB olive oil
1 TB butter
Colby/Jack cheese, shredded
In large zip lock bag, combine, cilantro, garlic, lime zest, lime juice, salt, pepper and olive oil. Add chicken to bag and seal. Refrigerate for 1 hour.
Grill chicken breasts until no longer pink and juices run clear.
Meanwhile, sauté onions and peppers in olive oil and butter. Cook until vegetables are tender.
Heat tortillas and fill with chicken, vegetables, cheese, guacamole and sour cream.
