Our garden has been exploding with Zucchini. We usually plant way too many zucchini plants but this year we only bought one plant. I really can't believe all the zucchinis just one little plant produces.
So far I've made breads, cookies, veggie kabobs, froze sliced blanched zucchini for winter soups and of course shared them with the "girls".
Zucchini Chocolate Chip Oatmeal Cookies
1 1/2 cups flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1 stick butter
3/4 cup sugar
3/4 tsp. pure vanilla extract
1 1/2 cups shredded zucchini
1 cup oatmeal, quick or regular
1/2 cup Craisins
1 10 ounce package milk or dark chocolate chips
Whisk together flour, cinnamon, baking soda and salt in small bowl.
In large mixer combine, butter and sugar. Beat until well combined. Add egg and vanilla. Stir in zucchini. Gradually add flour mixture. Stir in oats, craisins and chocolate chips.
Drop by rounded teaspoons on greased cookie sheet or baking stone.
Bake 350 degrees for 8-10 minutes or until light golden brown. Let rest on cookie sheet for a few minutes and transfer to cooling rack.
Store in airtight container.
