I'm pretty sure without a doubt, that I've gained 25 pounds in a 24-hour period because of these little devils. They are unfortunately, melt in your mouth good!
2 1/2 cups flour
1 1/2 cups sugar
1 cup butter
2 eggs
1 TB lemon peel
2 TB fresh lemon juice
1 1/2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
1/2 cup pecan pieces
Sift together flour, cream of tartar, soda and salt. Set aside.
Cream sugar and butter until smooth. Gradually add eggs, stir until well combined. Stir in lemon peel and lemon juice.
Gradually add flour mixture, mixing until light and fluffy.
Refrigerate dough for at least 3 hours.
Drop by rounded teaspoons on ungreased baking stone. Bake 400 degrees for 6-8 minutes, just until edges start to brown. Do not overbake.
Let rest on cookie sheet for 2 minutes. Transfer to cookie rack to cool.
Frost with Lemon Cream Cheese Frosting Below....and prepare to faint!
Lemon Cream Cheese Frosting
8 ounce package cream cheese
3/4 cups butter
juice from one lemon
1/2 of 1 pound bag of powdered sugar
Cream butter and cream cheese until smooth. Gradually add lemon juice and powdered sugar. Beat until light and fluffy.
Frost cookies and add a few pecan bites :)
