Did I really wait a year to try these?
I cannot believe how light and fluffy they are!
Yummy little devils.............
3 cups flour
3 tsp. baking powder
1 tsp. salt
1/2 tsp ground nutmeg
1 cup sugar
2/3 cup shortening
2 eggs
1 cup milk
Coating
2 sticks butter
1 1/2 cup sugar
3 tsp ground cinnamon
In large bowl combine flour, baking powder, salt and nutmeg. Set aside.
In separate bowl, cream together sugar and shortening. Add eggs and mix again.
Alternate milk and flour mixture, mixing until well combined.
Fill lightly greased muffin cups two thirds full. Bake 350 degrees for 20-25 minutes or golden.
Remove muffins from pan.
Melt butter in bowl and in a separate container mix cinnamon and sugar.
Dip warm muffins in butter and then roll in cinnamon sugar mixture.
