Here's an easy Lemon Roll recipe for you, simple and delicious :)
If you're making cinnamon rolls, rolls or bread you can save a little bit of dough and make a little batch of lemon rolls.
I used one of my favorite roll recipes, for the dough but I've also used Rhodes Sweet Dough for this recipe.
1 loaf Rhodes Sweet Dough
1 can lemon frosting
cream cheese frosting
Cream Cheese Frosting
8 ounce package cream cheese
1 pound powdered sugar
1 tsp. pure vanilla extract
3/4 cup butter
For cream cheese frosting, combine cream cheese and butter until smooth. Add vanila and gradually add powdered sugar until light and fluffy.
Follow your favorite sweet roll recipe or take a loaf of Rhodes sweet bread dough, set on counter for a few hours or in refrigerator overnight until no longer frozen.
On lightly floured surface, roll dough to 15 x 12" rectangle. Spread enough lemon frosting to cover dough. Starting with short end, roll up tightly.
Cut in slices. Spray jelly roll pan with cooking spray and arrange rolls, about an inch apart.
Spray cooking spray on saran wrap and place over rolls. Let rolls rise until their about double in size.
Bake 350 degrees for 10-12 minutes or until rolls just begin to brown.
Immediately frost with cream cheese frosting or additional lemon frosting....or both!
