Crock Pot Chicken and Wild Rice Soup

I love a recipe that you can just dump all of the ingredients into the crock pot and forget about it. We've already had it several times and LOVE it.

1 pound boneless chicken breasts
1/2 small onion, diced
2 carrots, diced
2 celery stalks, diced
2 garlic cloves, minced
1/2 tsp salt
1/2 tsp pepper
1 1/2 tsp poultry seasoning
2 bay leaves
2 TB butter
6 cups chicken broth
3/4 cup wild rice blend, uncooked

Add all ingredients to crock pot. 

Cook on low for 6 hours or until chicken can easily be shredded with fork. 

Remove chicken and shred with fork. Add back to crock pot and stir. Keep warm until ready to serve.

Egg Nog Ice Cream

I've never been a fan of egg nog but Egg Nog Ice Cream...YES!

This is a super easy recipe that's great for the holidays

Egg Nog Ice Cream

2 cups egg nog
2 cups heavy cream
1 10 ounce can sweetened condensed milk
1 tsp. pure vanilla extract

Combine egg nog, heavy cream, milk and vanilla in bowl.

Pour mixture into ice cream maker and freeze using manufacturers instructions.

Once mixture reaches soft serve stage, transfer to plastic container and store in freezer.

Chill at least 2 hours before serving. Sprinkle with nutmeg or cinnamon if desired.
