Buttermilk Brownie Cake
2 cups sugar
2 cups flour
1/4 cup cocoa powder
1 cup water
1/2 cup vegetable oil
1/2 cup butter
1/2 cup buttermilk
1 tsp. baking soda
2 eggs, slightly beaten
1 tsp. pure vanilla extract
Frosting
1/2 cup butter
1/4 cup cocoa powder
1/3 cup buttermilk
1 pound powdered sugar
1 tsp. pure vanilla extract
Combine sugar, flour and cocoa. Set aside.
In medium saucepan, combine water with oil and butter. Bring to a boil; add to flour mixture and mix well. Add buttermilk, baking soda, eggs and vanilla. Mix well and pour into greased 15x10 inch baking pan.
Bake 20 to 25 minutes or until toothpick inserted comes out almost clean.
Cool completely on wire rack.
For frosting, combine butter, cocoa and buttermilk in saucepan. Bring to a boil, remove from heat. Gradually beat in powdered sugar and vanilla until combined.
Spread frosting over cooled brownies.
Cut in 48 pieces and serve. Cockroaches are optional and highly recommended for Halloween :)
