Banana Oat Muffins
1 1/2 cups flour
1 cup rolled oats
1/2 cup white sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 tsp. pure vanilla extract
3 bananas, mashed
1 cup pecan halves
Combine flour, oats, sugar, baking powder, soda and salt.
In large bowl combine lightly beaten egg, milk, oil and vanilla. Add mashed banana until well combined. Stir in flour mixture, just until combined. Stir in pecans.
Line a 12 cup muffin tin with paper baking cups and divide mixture.
Bake 400 degrees for 18 minutes, or until toothpick inserted comes out clean.
Tip: You can use half wheat flour and use applesauce in place of the oil for a healthier version.
