This week I've been adding lots of recipes for Cinco de Mayo.
We absolutely LOVED this pasta! The flavors were incredible and it's so fast and easy to make.
Taco Pasta
1 pound ground turkey burger or beef
1 small onion, diced
1 14 ounce can diced tomatoes with green chiles
1 garlic clove, minced
1 package taco seasoning mix
8 ounce package medium pasta shells
season salt, sprinkle
salt and pepper to taste
1/2 cup sour cream
3 ounces cream cheese, softened
Boil pasta shells as directed on package. Reserve 1/2 cup pasta water.
Meanwhile, cook turkey burger with onion, garlic, season salt and pepper on low-medium heat.
Add tomatoes and taco seasoning mix. Simmer for 5 minutes. Add pasta, 1/2 cup reserved pasta water, sour cream and cream cheese. Stir to combine and simmer on low heat until cream cheese is combined.
