Pumpkin Chocolate Chip Snack Cake
1 1/4 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground pumpkin pie spice
3/4 cup sugar
1 15 ounce can pumpkin
1/4 cup oil
2 eggs
1 tsp. pure vanilla extract
1/2 cup chocolate chips
Whisk together flour, baking powder, baking soda, salt, cinnamon and pumpkin spice. Set aside.
In mixing bowl, combine pumpkin and sugar, mix until combined. Add oil, eggs and vanilla. Gradually add dry ingredients, mixing until well combined. Stir in chocolate chips.
Bake 350 degrees for 40-45 minutes in 8 inch square baking dish.
Cool completely. Frost with cream cheese frosting and a few more chocolate chips :)
Cream Cheese Frosting
8 ounce cream cheese, softened
2 TB butter, softened
3/4 cup powdered sugar
1 tsp. pure vanilla extract
Combine cream cheese and butter, beat until smooth. Slowly add powdered sugar and vanilla. Whip until smooth.
We like this snack cake best when it's chilled. Store in refrigerator.
