I made this for Thanksgiving. I'm a HUGE coconut fan. I can't say that for the rest of my family.
Oh well, more for me :) So YUMMY!!!
Coconut Cream Pie
1 1/2 cup half and half
1 1/2 cups coconut milk
2 eggs
3/4 cup sugar
1/3 cup corn starch
1/4 tsp. salt
1 cup flaked coconut, toasted
1 tsp. coconut extract
1 9 inch pie shell
Topping
1 small carton whipping cream
1/4 cup powdered sugar
1 tsp. coconut extract
In saucepan, combine half and half, coconut milk, eggs, sugar, cornstarch and salt. Bring to a boil over low heat, stirring constantly.
When mixture begins to thicken, remove from heat.
Stir in 3/4 cup of coconut and coconut extract.
Pour in prepared pie shell. Chill for 4 hours.
Whip together topping and top pie with cream. Sprinkle remaining coconut on top.
