I love a good stir fry. When I want REAL food, this is what I crave.
I searched for a great stir fry sauce to compliment my original stir fry recipe and this one is OVER the top GOOD.
I love that you can easily mix up the ingredients for the sauce and store it in the fridge until you're ready to use.
Chicken Veggie Stir Fry
1 to 2 pounds chicken cut in bite size pieces
4 TB butter
4 TB olive oil
season salt, to taste
pepper, to taste
1 red bell pepper, cut in strips
1 green bell pepper, cut in strips
1 small onions, sliced
8 ounce container mushrooms, sliced
Stir Fry Sauce, recipe below
2-4 cups white rice, prepared
In large skillet on medium heat, add 2 TB butter and 2 TB olive oil. Add chicken and sprinkle with season salt and pepper to taste. Cook chicken until no longer pink and golden.
Meanwhile, in another large skillet on medium heat add 2 TB butter and 2 TB olive oil. Add peppers, onions and mushrooms. Cook until vegetables are tender.
Add chicken to vegetables and half of Stir Fry Sauce mixture. Stir together and mixture will bubble and thicken in a few minutes.
Serve over prepared rice.
Notes: When adding the stir fry sauce, I pour very slowly and stir the mixture in with my vegetables and chicken. I want an even amount of stir fry sauce with my chicken and vegetables and nothing too soupy or dry. I found that half of the Stir Fry Sauce recipe was the perfect amount. This will always depend on how much chicken and vegetables you are using.
When sautéing your chicken and vegetables in butter and olive oil, you can add more or less. I find that with the chicken, I would add a little more olive oil if needed.
Stir Fry Sauce
3 TB cornstarch
1/4 cup brown sugar
1/4 tsp. ground ginger
2 garlic cloves, minced
1/2 cup soy sauce
1/4 cup apple cider vinegar
1/2 cup water
1 1/2 cups chicken broth
1/2 tsp. sesame oil
Add Stir Fry Sauce ingredients to pint size jar and shake up. I only use half of this mixture and save the leftover sauce for the next week---we loved it so much we made it again!
