I've been pinning Monster Cookie recipes forever. I finally got around to giving one of the recipes a try.
These are really GOOD! They had just the right mix of our favorite things.

Monster Cookies
1/2 cup unsalted butter, softened
1 cup brown sugar
1/2 cup creamy peanut butter
1 egg
2 tsp. pure vanilla extract
3/4 cup flour
1 tsp. baking soda
1 tsp. cornstarch
1/4 tsp. baking powder
1/4 tsp. salt
1 1/2 cups old fashioned oats
1 cup chocolate chips ( I used milk chocolate chips)
1 cup M&M's
In small bowl combine flour, baking soda, cornstarch, baking powder and salt. Whisk to combine.
In large bowl, combine butter, brown sugar and peanut butter. Beat until smooth. Add egg and vanilla. Gradually add dry ingredients. Stir in oatmeal, chocolate chips and M&M's.
Measure 1/4 cup of dough and place on parchment paper covered baking sheet. Bake 350 degrees for 10-12 minutes, or just until edges begin to brown. Remove from cookie sheet after 3 minutes and transfer to cool on wire rack.
