I bought a lot of strawberries last weekend but didn't have all the ingredients for my Strawberry Upside Down Shortcake. I decided to tweak my Peach Upside Down Cake Recipe and this was the result. AWESOMENESS.
We loved it and next time I'll try mixing it up with different kinds of berries. So good :)
Strawberry Cake
1/4 cup butter, melted
2 cups fresh strawberries, sliced
1 tsp. sugar for sprinkling
1/2 cup butter, softened
3/4 cup white sugar
1 egg
1 1/4 cups flour
1/4 tsp. salt
1 1/4 tsp. baking powder
1/2 tsp. vanilla extract
1/2 tsp. almond extract
1/2 cup milk
Put strawberries in bowl and sprinkle with 1 teaspoon sugar. Stir gently and let sit for 10 minutes.
Pour melted butter in 8x8 inch square baking dish. Top with strawberries. Set aside.
In small bowl, combine flour, baking powder and salt. Set aside.
In mixing bowl, combine 1/2 cup softened butter and sugar. Beat until fluffy. Add egg, vanilla and almond extracts.
Gradually add flour mixture, alternating with milk. Mix until just combined.
Spoon over strawberries.
Bake 350 degrees for 30-35 minutes, or until toothpick test comes out clean.
Serve warm with whipped topping or vanilla ice cream. Or both!
