Thought it would be fun to whip up a batch of these easy Mini Cherry Cheesecakes.
So yummy and bite size too :)
Mini Cherry Cheesecakes
1 1/4 cups graham cracker crumbs
1/3 cup butter, melted
3 TB brown sugar
8 ounce cream cheese, softened
1 egg
1/4 cup sugar
1 tsp. pure vanilla extract
1 can cherry pie filling
Preheat oven 375 degrees.
In small bowl, combine graham cracker crumbs, brown sugar and melted butter.
Spoon mixture in cheesecake pan or mini muffin pan, dividing mixture. Press with the back of a spoon and up the sides of the pan.
In another bowl combine softened cream cheese, egg, sugar and vanilla. Mix until smooth and creamy.
Spoon mixture on top of crumbs.
Bake for 10-15 minutes or until cream cheese is set.
Let cool on wire rack for 15 minutes.
Remove from pan and top each mini cheesecake with a spoonful of cherry pie filling.
Keep refrigerated.
