I bought some lunch size strawberry applesauces for Jake's lunchbox.
Well, he doesn't like strawberry applesauce, or really applesauce in general.
I had to figure a way to put them to good use.
So, what's a girl to do but to make a batch of pink strawberry doughnuts.
Strawberry Applesauce Doughnuts
1 1/4 cups cake flour
1/2 cup sugar
1 1/4 tsp. baking powder
1/2 tsp. salt
4 ounce container strawberry applesauce
1 egg
1/4 cup vegetable oil
1 tsp. pure vanilla extract
cooking spray
Icing
1 cup powdered sugar
4 TB milk
1 tsp. pure vanilla extract
red food coloring
sprinkles
Preheat Baby Cakes Doughnut Maker and spray generously with cooking spray.
Combine cake flour, sugar, baking powder and salt. Whisk together and set aside.
In large bowl, combine applesauce, oil, egg and vanilla. Mix until well combined. Gradually whisk in dry ingredients.
Spoon in Baby Cakes Maker, not all the way to the top. Close lid and bake 2 minutes.
Let cool on wire rack.
When cool, dip doughnuts half way in icing and decorate with sprinkles. Place on wire rack to set.
Tips: Spray doughnut maker with cooking spray for each batch you make. This recipe makes about 21 mini doughnuts. I used a pastry bag to fill my dough maker, makes it much easier to fill.
For the icing, combine powdered sugar, vanilla, drop food coloring and 2 TB of milk. Whisk together. Gradually add more milk little by little as needed. You don't want the icing to be too thick or runny. Just keep adding and whisking until you get it just right.
Oh and if you're a double dipper like me, you may want to double the icing :)
