I made these brownies yesterday for St. Patrick's Day. We all LOVED them. Jake's friends came over too and gobbled them up. I'll be sure to add these to my Recipe Binder---the BEST of the BEST recipes.

Lucky Mint Brownies
1 cup butter
3/4 cup baking cocoa
2 cups sugar
4 eggs
1 cup flour
1 tsp. pure vanilla extract
1/2 tsp. salt
Combine butter and cocoa in large saucepan, stirring constantly until well combined. Remove from heat, stir in sugar. Allow to cool slightly, add eggs one by one. Stir until well combined. Add flour, vanilla and salt. Stir to combine and pour in greased 9x13 pan. Bake 350 degrees for 20-30 minutes or until toothpick comes out clean.
Cool and frost with Lucky Mint Frosting. Chill for 1 hour. Top with chocolate topping. Put in freezer for 15 minutes. Cut in squares and serve. Refrigerate leftovers if needed :)
Lucky Mint Frosting
1/4 cup butter, softened
2 1/2 cups powdered sugar
3 TB milk
1 tsp. peppermint extract
5 drop green food coloring
Add butter to mixing bowl, beat until smooth. Gradually add powdered sugar, alternating with milk. Whip until fluffy. Add peppermint extract and green food coloring. Whip again and top cooled brownies with frosting. Chill.
Chocolate Topping
1/4 cup butter
1/4 cup baking cocoa
2 1/2 cups powdered sugar
4 TB milk
In saucepan, add butter and cocoa. Stir on medium heat constantly until well combined. Remove from heat and stir in powdered sugar and milk. Pour over top of chilled brownies and place in freezer for 15 minutes. Cut in squares and serve. Store leftovers in fridge if needed.
